Spinach and Boiled egg Korma

Korma curry pack

8 eggs (hardboiled and cut in half length ways)

1 Large bunch spinach or a large bag of leaves

1 tin Chopped Tomatoes

Salt to taste

Simply make up our Korma pack as normal, leaving out the creamed coconut, try and leave this sauce overnight to infuse. You may want to add a little more water than stated. Re heat the sauce and stir in 8 hardboiled eggs cut in half lengthways. Tear in one large bunch or a bag of spinach leaves. Simmer for 5 minutes. Serve with plenty of natural yoghurt.

Kachoombar (chopped Indian salad)

Serves 4-6

¼ Cucumber de seeded, finely chopped

1 Large onion, chopped finely

1 small firm tomatoes, finely chopped

2 Green chillies, finely chopped

A few coriander and mint leaves, finely chopped

Juice of 1 lemon

¼ Teaspoon salt

½ Teaspoon sugar

Mix all the ingredients together in a bowl and allow them to rest till the sugar dissolves. Serve chilled.
