Carrot Salad

1 tbsp vegetable oil
1/4 tsp black mustard seeds
1/4 tsp cumin seeds
pinch of ground turmeric
1/4 tsp salt
1/4 tsp caster sugar
1 1/2 tbsp lemon juice
500g carrots, finely grated
coriander leaves

Heat the oil in a small saucepan over a medium heat, add the mustard and cumin seeds, then cover and shake the pan until the seeds start to pop.

Add the turmeric, salt and sugar to the pan, then remove the pan from the heat and leave the spices to cool for 5 minutes. Mix in the lemon juice, then toss the carrot through. Cover and leave for 30 minues. garnish with coriander leaves just before serving.

Good refreshing taste and texture- i didn't have any black mustard so i substituted white mustard seeds and poppy seeds. Also when i make it again i will only use about 350g carrots as 500g made it a little dry with the amount of oil. Thanks for the black cardamon by the way if it was you who sent it for Brazil.
