Curry Packs

  1. Are the curries suitable for specific diets such as coeliac/vegan/diabetics etc?

You will find all the dietary information on each curry pack on the Dietary Restrictions page.

  2. What if the curry is too dry?

Always cook a curry with a lid on if more sauce is required. Once cooked you can add water or a tin of tomatoes, simmering for a further five minutes to create a little more sauce.

    Back to question
  3. What if the curry is too mild?

It is better in this case to have a pickle or chutney with your food to spice it up. Adding any raw chilli to the dish once cooked will affect the flavour.

    Back to question
  4. How long will the mixes last?

The mix will last for up to 4 weeks in a fridge and for six months in a freezer. Once cooked the food will last for 2 days in a fridge and up to one month in a freezer.

    Back to question
  5. How many people do they feed?

All our main curries will serve between four and six people. The side dishes will serve four as an accompaniment or two as a main dish. This is a guide and it does depend on the individual appetite and what is served alongside the dish, i.e. rice, naan etc

    Back to question
  6. Are the mixes vegetarian?

All of our mixes are vegetarian with the exception of the red and green Thai and the Malay Rendang.

    Back to question
  7. What if the curry is too hot?

Serve the curry with some Natural Yoghurt. This should be served as an accompaniment and only mixed into a curry when the curry has cooled slightly to avoid it curdling.

  8. You say to leave the curry overnight. I'm cooking it to eat tonight, is that okay?

That's fine! You may want to simmer the mix for a little longer before adding your ingredients - this will help to develop the flavours.

    Back to question
  9. What goes well in the curries?

All the curries are flexible and can be used with any meat, fish or vegetable. We do have some curries that are more suitable particular ingredients, our staff will be happy to advise.

    Back to question
  10. Do I need a special pan for the curry?

Any pan or wok with a lid that is large enough for around a kilogram of ingredients is perfect for cooking a great curry in. The quality of the food that's served up is more important than what it's cooked in!

    Back to question
  11. What do I do if there are only two of us eating the curry?

Just cook the full curry. Serve half and simply freeze the rest. Leftovers will keep just fine for two or three days in a fridge.

    Back to question
  12. What if the curry is too wet?

Cook for a further ten minutes without a lid on your pan. You can also try using coconut milk powder to soak up any excess liquid if it's very wet.

Rafi's curry packs can be stored in the refrigerator for up to four weeks. However, if you're not sure when you'll be cooking with them we would advise you to freeze them on the day they arrive, which then leaves you up to six months to make a cracking curry!
