An earthy combination of paneer (Indian cheese) and peas. Frying the paneer first enhances the overall texture and flavour of the dish.
Origin of paneer: The story goes that centuries ago paneer cheese was invented by accident. A Rajasthani shepherd was travelling across the desert with milk in a camel skin bag but the milk had curdled and compacted into a block with the whey acting as a preservative. He ate the cheese and drank the whey to quench his thirst.
Try mixing it up by adding spinach, chickpeas or mushrooms instead of peas.

Serves: 4 – 6 as a side dish
Shelf life & storage: The mix will last for up to 4 weeks in a fridge and for six months in a freezer. Once cooked the food will last for 2 days in a fridge and up to one month in a freezer.
