Sumac is an essential ingredient in Arabic cooking. It is made by crushing the small red sumac berry, which has a wonderfully fruity but tart flavour. It is best used in its raw state, simply sprinkled over salad, roasted vegetables or dips such as hummus. When used in cooking its intensity mellows, but it adds fantastic depth to meats, such as kebabs or chicken. If you enjoy sumac, you may also like Zaatar, a delicious Middle Eastern blend of sumac, thyme and sesame seeds.
