Mild in heat, these whole dried chillies are a popular ingredient in Mexican cuisine.
The Ancho chilli is a form of the Poblano chilli that is dried once the fruit is fully red. Anchos are heart-shaped and measure around 2.5” wide and 4” long.
The chillies are sweet and fruity, with flavours of raisin, cherry and prune. They can be added whole to sauces, or you can try crumbling or soaking them in hot water for 20 minutes, before pureeing and adding them to the dish. In Mexican cuisine, they are traditionally used in conjunction with the dried Pasilla chilli to make Mexican mole sauce.
