Aloo Sev Chaat

A savoury snack with potatoes, crunchy sev and tangy chaat masala.

Aloo Sev Chaat

Instructions

  1. Boil the potatoes in a pan of salted water, drain and leave to cool.
  2. Finely dice the onion, squeeze the lemon juice over it, and add a pinch of salt and sugar. Mix well and leave to sit for a minimum of 10 minutes.
  3. Cut the potatoes into bite-sized chunks, then mix with the onion, fresh coriander and chaat masala (this has quite a strong flavour so try adding 1 tsp first and add more if needed).
  4. Mix through the sev just before serving (otherwise it will go soggy) and serve at room temperature.

"This is one of my favourite snacks to make. I like to finish it off with tamarind chutney (thinned down with a little water) and yoghurt. If you have leftover potatoes (I always make too many!) it can be rustled up in no time, but even made from scratch it's quick. I like to make the potato mixture and then portion it off, mixing in small amounts of sev as and when snack time calls!" - Ian
