Courgette Curry

Courgette Curry
  • 2 large courgettes, cut into 1cm slices

  • 2 tbsp oil

  • ½ tsp cumin seeds *

  • ½ mustard seeds *

  • 1 finely sliced onion

  • 2 garlic cloves

  • ¼ tsp chilli powder *

  • 1 tsp ground coriander

  • 1 tsp ground cumin *

  • ¼ tsp salt

  • 1 tbsp tomato puree *

  • 400g tin of chopped tomatoes

  • 150 ml water

  • 1 tbsp lemon juice

  • 1 tbsp chopped fresh coriander

  • 1 tsp garam masala

A simple vegetarian curry to celebrate the season.


Heat the oil in a large pan. Fry the cumin and mustard seeds for 2 minutes until they splutter.

Add the onion and garlic and fry for 5-6 minutes.

Add turmeric, chilli powder, ground coriander, ground cumin and salt, fry for 2-3 minutes.

Add the courgette, cook for 5 minutes, keep stirring so they do not burn.

Add the tomatoes, tomato purée, water and lemon juice, stir together. Then simmer for 10 minutes until the sauce has thickened and the courgette is cooked but still has some bite.

Stir in fresh coriander and garam masala just before serving.
