Fennel, Apple and Cucumber Salad

A mouth-watering coleslaw salad for those hot summer days.

Serves: 4-6 | Suitable for vegetarians

Fennel, Apple and Cucumber Salad

Instructions

  1. Julienne the fennel bulbs, apple, carrot and cucumber (cut them into small, matchstick shape pieces) and finely chop the other veg.
  2. Mix all of the fruit and vegetables together then add the fennel tops and flat leaf parsley.
  3. Stir in the lemon juice, olive oil and chilli flakes and season well.
  4. For best results, this salad is best left for an hour before serving for the flavours to marry.
