The first thing that comes to mind when you think of green chillies is the heat. But there is so much more to them than that. High in vitamins A and C, their vibrant color also signals high amounts of the antioxidant beta-carotene, which supports the cardiovascular system, as well as helping maintain the health of the skin, eyes and immune system. Chillies increase your metabolic rate, which is what allows your body to burn calories, and, in turn, they help to satisfy your appetite. They can also help us block the absorption of cholesterol in other foods. With so many health benefits it’s fair to say that chilli is a proper super food.

In India, chillies are used in most savoury dishes; in fact, chillies are widely used in many hot climates. This can seem counter-intuitive, but by making you sweat they do a very good job at cooling the body down.

Fresh green chillies have a wonderful flavour and can transform many dishes when used correctly. This simple omelette recipe is a great example. Even a salad can benefit from a little heat. The real trick is getting the right amount for your own tolerance. This can only really be done with a little trial and error!

Maybe its time you looked at the green chilli in a different way and try experimenting with this exciting vegetable.
