Ian's Favourite Spice
"It changes all the time, but my current favourite spice is onion (nigella) seeds. They have a pleasing aromatic, savoury flavour. I nearly always use them in flat breads, adding a pinch to the dough just at the end of kneading. This week I toasted some along with a mixture of seeds to add texture to a salad. But my favourite thing to do is sprinkle them on tomatoes along with some olive oil, paprika and flaked sea salt, roast them in the oven and smush them on to chargrilled bread".
