Rafi's Cumin Rice

Serves: 4 – 6 Vegetarian Vegan

Rafi’s Cumin Rice pack is a special blend of north Indian spices and basmati rice that combine to make the popular rice dish. Simply fry off the spices in a bit of oil, add the rice and water and let it cook! Our recipe uses a few aromatic spices and lots of earthy cumin. For a garnish that adds both savoury and sweet tones, we like to finish it with fried onions.

This is a perfect accompaniment to our Palak Paneer. It will also work well with a Tarka Dhal or a Tikka Masala, but you can serve it with whatever you fancy!

Shelf life & storage: Store in a cool dark place.

  1. Heat 1 tbsp oil in a sauce pan, add the spice sachet and fry for 2 - 3 minutes.
  2. Add the rice and mix well.
  3. Add 500ml cold water and a pinch of salt then bring to the boil.
  4. Cover and cook on a low heat for 10 minutes without lifting the lid.
  5. Leave to rest for 5 minutes off the heat with the lid still on.
  6. Toss grains gently with a fork and garnish with fried onions before serving.
