Thai Yellow Curry Pack (Serves 2 - 3)

Serves: 2 – 3 Vegetarian Vegan

A richer curry than our Thai Red or Green but slightly milder. This is our only Thai Curry Pack which doesn't contain shrimp paste, so it makes the perfect veggie meal for two!

Thai food is all about contrasting and complex flavours and textures, and our Thai Yellow is no exception. We've perfected a combination of spices and lemongrass to create this wonderfully fragrant dish.

Try it with: We love ours with cubed potato, green beans and roasted pepper!

Shelf life & storage: The mix will last for up to 4 weeks in a fridge and for six months in a freezer. Once cooked the food will last for 2 days in a fridge and up to one month in a freezer.

  1. Empty the contents of the pack into a pan with half a tin of coconut milk (200ml) and 175ml of water.
  2. Simmer for 5 minutes.
  3. Add 500g of ingredients of your choice.
  4. Mix well and gently cook.
  5. Add 1/2 tsp sugar and lime juice until fairly tangy, then simmer for a further 5 minutes.
  6. Adjust salt and garnish with coriander leaves.
