Tomato Goju Curry Pack

Serves: 4 – 6 (as a side) Vegetarian Vegan

A light, sweet and sour South Indian tomato curry. This is a savoury spice blend which includes; nutty roast lentils, jaggery (raw cane sugar) and coconut.

Try it with: Perfect to serve with rice and fish dishes.

Shelf life & storage: The mix will last for up to 4 weeks in a fridge and for six months in a freezer. Once cooked the food will last for 2 days in a fridge and up to one month in a freezer.

  1. Empty sachet 1 (lentils and spices) into a pan with 2 tbsp of oil. Cook on a low heat for 5 minutes or until the lentils are golden brown and tender.
  2. Add 1 chopped onion, 4 cloves of chopped garlic and cook on a medium heat till the onion is soft.
  3. Add sachet 2 (powders and coconut) and 1kg of fresh chopped tomatoes along with a little water and cook for a further 5 to 7 minutes oruntil everything is well blended and the tomatoes have just started to break down.
  4. Season garnish with lemon juice.
