Tamarind blocks are made from crushing the seed pods of the tamarind tree, which are filled with the sticky brown pulp that gives tamarind its unique flavour. Tamarind's distinctive tangy taste makes it an essential ingredient in Indian and Far Eastern cuisine, in which it is often used towards the end of cooking to retain its delicate flavour.
