A bright-red dried chilli used in Mexican cuisine.
The Guajillo chilli is 5-7 inches long, has a small amount of spice and its taste is reminiscent of green tea and berries. It is ideal for adding a splash of bright-red colour and a pinch of heat to sauces, soups and stews. It also makes a great addition to salsas and tamales.
To use the chilli, soak it in hot water for 30 minutes, puree and force through a sieve to make a paste. This can then be added to the dish as required.
