Cumin Potatoes

This dish has really earthy spices which complement the savoury, sweet taste of new potatoes. It can be served alongside any curry or even just a simply cooked piece of fish and steamed veg.

Serves: 4 - 6, as a side | Suitable for vegetarians

Cumin Potatoes

  1. Boil the potatoes for 15 minutes, or until cooked, and then drain in a colander.
  2. Heat the oil in a large frying pan and then add the cumin seeds and asafoetida. Cook for 2 minutes, until the cumin has browned.
  3. Add the potatoes and mix in the coriander powder, cumin powder, turmeric and chilli powder to coat the potatoes. Cook for a further 1 - 2 minutes.
  4. Remove the potatoes from the pan, season well with salt and garnish with a squeeze of lemon juice.
