Vegetable Tikka Kebabs

Vegetable kebabs with a spicy tikka coating. Try experimenting with different types of veg for a range of textures and tastes.

Vegetable Tikka Kebabs

Instructions

  1. Cut your mixed veg into large chunks, place in a colander, sprinkle with salt and leave for 30 minutes.
  2. Rinse off the salt and dry well, then mix in the marinade powder, oil and lime juice.
  3. Thread the vegetables onto skewers and place on a pre-heated BBQ cook till the vegetables are golden brown.
  4. Serve with a herb salad.

This is a spicy marinade; to make it milder simply mix in some yoghurt before threading on to the skewers. This recipe will work well with most vegetables.
