Vegetable Tikka Kebabs
Vegetable kebabs with a spicy tikka coating. Try experimenting with different types of veg for a range of textures and tastes.
- Cut your mixed veg into large chunks, place in a colander, sprinkle with salt and leave for 30 minutes.
- Rinse off the salt and dry well, then mix in the marinade powder, oil and lime juice.
- Thread the vegetables onto skewers and place on a pre-heated BBQ cook till the vegetables are golden brown.
- Serve with a herb salad.
This is a spicy marinade; to make it milder simply mix in some yoghurt before threading on to the skewers. This recipe will work well with most vegetables.
