Cabbage and Egg Scramble

This dish is inspired by an egg dish we often had at lunch time when we were
staying in a village in the foothills of the Himalayas. Very simple, but very comforting home-cooked food.

Cabbage and Egg Scramble

Instructions

  1. Heat the oil in a large frying pan and fry the ajwain seeds, fenugreek seeds and chilli flakes for 1 minute.
  2. Add the garlic and fry for 1 minute, until it starts to brown around the edges.
  3. Add the cabbage and stir fry for 2 minutes.
  4. Add the turmeric and a splash of water and continue to cook for 3-4 minutes, until the cabbage is cooked, but still has a little crunch.
  5. Squeeze in the lemon juice and mix.
  6. Add the eggs and cook for 2-3 minutes, scrambling them in with the cabbage and mixing everything together.
  7. Just before serving, sprinkle over the garam masala and add salt to taste.
