Aloo Chaat (Potato Snack)

Rafi's Aloo Chaat recipe

Serves: 4 - 6 Ready in: 30 minutes

Introduction

 We love these chaats (snacks) here at the Spicebox: they’re a staff lunch staple!

They are often tangy, sour, salty, and a little sweet, with loads of different textures. It’s so easy for each person to build their own perfect snack by mixing individual portions from the ingredients. There is no equivalent snack here in the UK! 

This recipe is a great starting point for lots of different styles of chaat. You can eat the potatoes as they are, or add things into the mix for different textures and flavours. 

Ingredients

 Serves 4 - 6

1kg potatoes (peeled and diced)
2-3 tbsp oil
2 tsp Cumin Powder
2-3 tsp Chaat Masala
2 tsp Amchur Powder
1/4 tsp Chilli Powder
1 lemon
Coriander to garnish
Salt to taste 

Instructions

1. Pre-heat the oven to 240c/gas 9.

2. Put the potatoes on a large roasting tray, drizzle over the oil and roast in the oven for about 30 minutes (stirring after 15 minutes) until they are cooked through and starting to crisp up.

3. Remove from the oven, and allow to cool.

4. Mix the potatoes with the remaining ingredients. Adjust to taste by adding more chaat masala and/or salt.

5. Garnish with a squeeze of lemon juice and fresh coriander.
