Chicken Jalfrezi Curry

Rafi's Chicken Jalfrezi Curry recipe

Serves: 2 - 3/4 - 6 Ready in: 45 minutes

Introduction

We used chicken thighs and our Jalfrezi Curry Pack to make this delicious family favourite. 

Rafi’s Jalfrezi Curry Pack is a classic and versatile curry with savoury tones from cumin, curry leaves and fenugreek (methi). Rafi described this dish as the epitome of home cooking. The Jalfrezi recipe is based on a curry she would make most weeks. 

Ingredients

500g chicken thigh fillets  1kg chicken thigh fillets
175ml water 300ml water
1/2 tsp sugar 1 tsp sugar
1/2 green pepper 1 green pepper
2 chopped tomatoes 4 chopped tomatoes
Coriander to garnish Coriander to garnish
Salt to taste Salt to taste 

Instructions

1. Chop the chicken thighs into pieces, the tomatoes into quarters and green pepper into large chunks - this is so the ingredients retain some texture.

2. Empty your Jalfrezi Curry Pack into a pan and toast the spices on a low-medium heat for 2-3 minutes.

3. Add water, mix, then cover and cook for 5-10 minutes on a low-medium heat.

4. After 5-10 minutes, you should start to see oil sitting on the sauce - this means the curry is ready for your chicken. Add the chicken thighs, mix well, cover for 15 minutes on a low-medium heat.

5. Add the green pepper, fresh tomatoes and sugar. Return the lid for another 5 minutes.

6. For the last 5 minutes of cooking, remove the lid reduce the sauce and finish cooking.

7. Garnish with a large handful of chopped fresh coriander and season with salt, to taste. Serve and enjoy!
