Masala Omelette

A Fernandez family favourite to have for breakfast.

Masala Omelette

Serves: 8 | Suitable for vegetarians 

Introduction

This is a Fernandez family favourite that would often be served for Sunday breakfast. 

Ingredients

 Serves 4

6 eggs
2 tbsp oil 
1/2 tsp Cumin Seeds
1 onion (chopped)
2 green chillies (thinly sliced)
2 tomatoes (chopped)
1/4 tsp Turmeric
1/2 tsp Garam Masala
Fresh coriander
Salt to taste

Instructions

  1. Crack the eggs into a bowl and whisk together with a fork.
  2. Heat the oil in a large frying pan. When hot, add the cumin seeds and fry for 1-2 minutes.
  3. Add the onion and chilli and fry for 4-5 minutes until the onion has softened.
  4. Next, add the tomatoes, turmeric and garam masala, and fry for further 2 minutes.
  5. Add the eggs, coriander, and a pinch of salt. Mix everything and leave to cook for 4 -5 minutes until the eggs are set, but still soft.
  6. Turn it out and serve with crusty bread and some chilli sauce.
