Masala Omelette
A Fernandez family favourite to have for breakfast.

Introduction
This is a Fernandez family favourite that would often be served for Sunday breakfast.
Ingredients
Serves 4 |
6 eggs |
2 tbsp oil |
1/2 tsp Cumin Seeds |
1 onion (chopped) |
2 green chillies (thinly sliced) |
2 tomatoes (chopped) |
1/4 tsp Turmeric |
1/2 tsp Garam Masala |
Fresh coriander |
Salt to taste |
Instructions
- Crack the eggs into a bowl and whisk together with a fork.
- Heat the oil in a large frying pan. When hot, add the cumin seeds and fry for 1-2 minutes.
- Add the onion and chilli and fry for 4-5 minutes until the onion has softened.
- Next, add the tomatoes, turmeric and garam masala, and fry for further 2 minutes.
- Add the eggs, coriander, and a pinch of salt. Mix everything and leave to cook for 4 -5 minutes until the eggs are set, but still soft.
- Turn it out and serve with crusty bread and some chilli sauce.
