Rafi's Masala Papads

Serves: 6 Ready in: 30 minutes

Introduction

This light snack can also be served on little papads as a canapé before a dinner party.

Using freshly cooked papads is best. The un-popped versions are really easy to cook – either in the microwave, under the grill or even directly on the gas hob!

Ingredients

 Serves 6

6 Papads
1 tsp Cumin Powder
2 tsp Amchur Powder
1 tbsp fresh coriander
2 chopped tomatoes
1 red onion (finely chopped)
Salt to taste

Instructions

  1. Mix everything - apart from the papads - together in a bowl and leave to rest for about 30 minutes.
  2. Cook the papads, either in the microwave or in some oil in a frying pan.
  3. Break the papads in to large pieces and sprinkle the prepared mixture over them just before serving. Or simply serve the mixture in a bowl and let everyone dig in!

The Rafi's Spicebox Cookbook

In 2016, we released the Rafi’s Spicebox Cookbook with recipes all based on Indian flavours and concepts. Some of them have evolved from Rafi’s original recipes and others from our team's travel to India and beyond. This book was written to inspire you to cook the best food that you can. If we can encourage you to enjoy the whole process of cooking these dishes and sharing them with family or friends, our work is done. We’re very proud of these dishes, and hope to hear what you’ve done with them in your own kitchen!
