Rafi's Thai Green Mussels Broth Recipe

Serves: 2 - 3/4 - 6 Ready in: 20 minutes

Introduction

Juicy and aromatic, this version of our stunning Thai Green curry is a real winner. The leftover broth also makes a wonderfully warming soup.

Rafi’s Thai Green Curry Pack creates a thin coconut sauce with distinctive flavours of lemongrass, lime leaves and green chilli.

We love piling a bowl high with mussels in the middle of the table and letting everyone help themselves!

Ingredients

Serves 2 - 3 Serves 4 - 6 
Thai Green Curry Pack (Serves 2 - 3) Thai Green Curry Pack (Serves 4 - 6)
175ml water 300ml water
200ml (1/2 tin) Coconut Milk 400ml Coconut Milk
500g mussels 1kg mussels
1/2 lime 1 lime
Coriander to garnish Coriander to garnish
Salt to taste  Salt to taste 

Instructions 

  1. Empty the Thai Green Curry Pack into a pan and toast off the spices on a low/medium heat for 5 minutes.
  2. Add water and coconut milk then simmer for 5 minutes.
  3. Wash and prepare your mussels then simply steam them in the sauce till they open.
  4. Add sugar and lime juice. Season with salt, garnish with plenty of fresh coriander. Ready to serve, enjoy!
