Okra Fry

This vegetable is often used in Indian cuisine bringing a unique flavour to recipes.

Rafi's Okra Fry Recipe

Serves: 4 Ready in: 10 minutes 

Introduction

In our opinion, this is the best way to eat okra. Okra has an unusual flavour, but it looks beautiful when sliced, like little stars. When fried in this way it becomes crisp and you could serve it as a nibble with drinks, or as an accompaniment to your main course. 

Ingredients

 Serves 4 
350g okra
1/2 tsp salt
1/2 tsp Turmeric
1/2 tsp Chilli Powder
3 tbsp oil
1/2 tsp Mustard Seeds
Coriander to garnish

Instructions

  1. Cut okra into 2.5 cm slices, rub with turmeric, chilli powder and salt.
  2. Heat oil in a pan and add mustard seeds until they crackle.
  3. Add the okra and fry uncovered until they are nice and crisp, stirring occasionally.
  4. Serve hot, garnished with fresh coriander.
