Prawn Kebabs

Prawn Kebabs

Introduction

These kebabs are a typical street food from Goa and Kerala - the sort of snack you might come across while walking along a beach. We love cooking these up on the barbecue as they always go down a treat.

Ingredients

 Serves 4

1 tsp cardamom seeds
2 tsp Cumin Seeds
2 tsp Coriander Seeds
1/4 tsp Ground Cinnamon
1 tsp Turmeric
1 garlic clove (finely grated or crushed)
1 tsp Paprika
2 tbsp sunflower oil
200g fresh, raw king prawns
Salt to taste
Lime wedges to serve 

Instructions

  1. Dry roast the cardamom, cumin and coriander seeds in a small frying pan for 2-3 minutes or until golden and aromatic. Leave to cool.
  2. Grind the roasted seeds in a pestle and mortar or coffee grinder until fine. Combine with all remaining ingredients in a bowl. Add the prawns and stir well to coat them all. Leave to marinate for at least 1 hour.
  3. Just before cooking, season well with salt. Thread 3-4 prawns onto a skewer and continue until all the prawns are used.
  4. Cook under a hot grill for 2-3 minutes on each side until cooked and slightly charred. Serve immediately with wedges of lime.
