Intensify the flavours of squash with Rafi's Spices.

Roast Squash

Serves: 4 | Suitable for vegetarians 

Introduction

We love to roast squash as it really intensifies the flavour. We also always leave the skin on as it gives a sweet, chewy texture.

Ingredients

 Serves 4

1 butternut squash
2 tbsp oil
1/2 tsp Chilli Flakes
1/2 tsp Black Pepper
1/2 tsp Cumin Seeds
1/2 tsp Turmeric
1 tsp salt

Instructions

  1. Preheat the oven to 180 °C, gas mark 6.
  2. Chop the butternut squash into chunks, leaving the skin on.
  3. Grind the spices in a pestle and mortar.
  4. Mix the oil, spices and butternut squash together until well coated.
  5. Tip onto a roasting tray and roast for 45-50 minutes, until the edges of the squash are crisp.
