Spiced Mashed Potatoes
A Rafi's twist on mashed potato.

Introduction
This mash is great to serve alongside anything, especially sausages! We originally wrote this recipe as a filling for Vada Pavs, but it turned out so well, that we'd happily eat it on its own.
Ingredients

| 2 tbsp oil |
| 10 fresh curry leaves (sliced) |
| 1 tsp Mustard Seeds |
| 1/2 tsp Turmeric |
| 1-inch ginger (peeled and grated) |
| 2 garlic cloves (finely chopped) |
| 2 green chillies (or to taste) |
| 1/4 tsp Asafoetida |
| 1/2 tsp Chaat Masala |
| 750g plain mashed potato |
| Coriander to garnish |
| Salt to taste |
Instructions
- Heat the oil over medium heat, add mustard seeds and fry until they crackle.
- Add curry leaves, ginger, garlic and chillies, frying for 10-20 seconds.
- Take off the heat, add powdered spices and then tip spices and oil on top of the mashed potato.
- Stir through with the fresh coriander and salt to taste.
