Tandoori Vegetable Skewers

Use Rafi's Tandoori Marinade to make these paneer and vegetable skewers.

Rafi's Tandoori Vegetable Skewers Recipe

Serves: 4 - 6 | Suitable for vegetarians 

Introduction

Paneer and vegetables marinated in yoghurt and Rafi's Tandoori Marinade. A wonderful vegetarian alternative to Tandoori chicken.

Ingredients

 Serves 4 - 6
250g paneer (cubed)
250g vegetables (peppers, red onion, courgette)
5 tbsp Rafi's Tandoori Marinade
100g natural yoghurt
Salt to taste

Instructions

  1. In a large bowl mix together the yoghurt, Rafi's Tandoori Marinade and a pinch of salt.
  2. Add in the paneer and vegetables, mix well and leave to marinate for at least half an hour.
  3. Thread the ingredients onto skewers (if using wooden skewers it is best to soak them in water before using them, to help stop them burning during cooking).
  4. Cook the skewers either under a hot grill or on a BBQ for 15 -20 minutes, turning once each side is charred.
