Coconut Vegetable Curry Pack

Cook Rafi’s exclusive Coconut Vegetable Curry Pack to have alongside a main curry or as a lighter main meal option. This simple and quick curry is perfect as a mid-week meal and is ready in as little as 15 minutes.

This delicate coconut sauce is spiced with fragrant fennel and curry leaves.

The recipe is based on a recipe from Rafi's first cookbook and was originally made with pumpkin! Rafi’s son, Kevin often had a version of this as a child and still fondly remembers the simple flavours of the sauce.


Try it with: Carrot, Green Beans, Baby Sweetcorn and Peppers.


  1. Gently heat 2 tbsp vegetable oil in a large frying pan or wok.
  2. Empty the pack into the pan with 1 finely sliced onion and gently fry until the onion is soft and translucent.
  3. Stir in 500g vegetables (e.g. beans and carrots) and fry for a further 1 - 2 minutes.
  4. Reduce the heat and pour in 200ml coconut milk.
  5. Cook uncovered for 4 - 6 minutes, or until the vegetables are tender.
  6. Adjust salt and garnish with coriander leaves and lime juice.
