Biryani Spice Mix
Create this famous layered rice recipe at home using Rafi’s Biryani Pack. Our method requires 4 hours to marinate then 1 hour and 15 minutes to cook. Cook directly on the hob for a delicious layer of crunchy rice at the bottom of the pan.
This one-pot meal is brimming with the aromatic flavours of cardamom, cinnamon and black cumin.
The Biryani is the most famous rice recipe in India being cooked all around the country. It’s often served at celebrations in huge quantities.
Rafi was born in Hyderabad which is famed for being home to the best Biryani. The Hyderabadi Biryani is known for being very spicy. However, like all of our Spice Mixes, you can choose the heat strength that you prefer.

- Empty the contents of the pack into a bowl with 115g natural yoghurt and 1kg of ingredients of your choice.
- Mix well and marinade for at least 4 hours.
- Soak 450g of rice in boiling water for 5 minutes, then drain.
- Grease a heavy pan with butter and add in a thin layer of the rice. Add the marinated ingredients and cover with the remaining rice.
- Mix 285ml water and 100ml milk, then pour this evenly over the rice. Dot the surface with butter and place a greased piece of foil on top.
- Cover with a lid and gently cook for 1hr 15mins.
- Toss before serving.

Great flavour and simple to cook. This will become a cupboard staple for us, it makes six portions easily so it's great for meal prep and you can add whatever meat and veggies are to hand! Our favourite so far is lamb and butternut squash.

I haven't made a Biryani for a while and used to make my own from scratch but decided to try this. It was good. I added a few spices to it and put some additional chilli in because it was mild. Next time I will order the medium rather than the mild.
Thank you Cherie for the 5* review on the Biryani Curry Pack. Another great way of adding heat to your meals is by adding a hot pickle/chutney on the side of your dish. This way you can dip into the heat and cater to guests with different heat preferences 😊
