Dum Aloo Spice Mix
Cook Rafi’s version of this North Indian side recipe at home in just 30 minutes.
Roasted new potatoes in a tangy, yoghurt-based sauce, spiced with coriander, cumin, fenugreek and cloves. Try this delicious side recipe alongside one of our aromatic Curry Packs like the Homestyle Curry.
“Dum” refers to the slow cooking method which involves cooking food on a low heat, often in a sealed container. “Aloo” refers to potatoes, which are the usual ingredients for this recipe.
Our Dum Aloo Curry Pack doesn’t involve this slow-cooking method and is simple to make at home. Roast your potatoes, make the Curry Pack (all you need is water, tomato puree and yoghurt) and you’ve got a traditional, homemade Dum Aloo.
Serve it with: Mushroom Bhajee or Saag Gosht

- Boil 500g of baby new potatoes and allow to cool.
- Prick the potatoes all over with a fork and roast in the oven with a little oil until golden brown.
- Empty the contents of the pack into a pan with 200ml water and 2 tsp of tomato puree then simmer for 5 mins.
- Slowly add 200ml of yoghurt, stirring continuously.
- Add the potatoes and a little water, bring to the boil and simmer until the sauce thickens.
- Garnish with coriander and serve.
