Make your own butternut squash curry at home with Rafi’s exclusive Golden Pumpkin Curry recipe.
A rich coconut sauce delicately spiced with mustard and fennel seeds. We recommend roasting your squash to add more texture and flavour to the curry.
Pumpkins are a very popular ingredient during the winter season in India with them being used for sweet and savoury recipes.
The flavours of this recipe evoke strong memories for Kevin, Rafi’s son. The family often had versions of this recipe when growing up, especially when Rafi was writing her first cookbook ‘Malaysian Cookery’, in which this recipe featured. Rafi would never roast the squash, but simply let it simmer in the sauce until soft and a little mushy. She would serve it simply with chapati or puris (fried breads).
Try it with: butternut, crown prince or kuri squash.

- Roast 500g of cubed squash (drizzled with oil) in the oven (200C) for 20-25 minutes.
- On a low heat, in 2 tbsp of oil, fry the contents of the spice pack for 2-3 minutes.
- Add one sliced onion. On a medium heat, fry for 6-8 minutes, until soft.
- Add 200ml of coconut milk and the roasted squash. Cook for 6-8 minutes.
- Season and finish with a squeeze of lime and fresh coriander.
