Pakora Spice Mix
Make Rafi’s version of this popular Indian street food snack in as little as 15 minutes. Pakoras make a great starter for a dinner party or eaten as a snack.
Our Pakora is a blend of gram flour, and savoury spices, including cumin and fenugreek and balanced with aromatic garam masala.
Pakora (pakoda, pikora or regionally bhaji or bhajia) is a well-known fried snack food found all across India. (Bhajia is a more common term in Gujarat). Recipes vary depending on region but essentially they are all a combination of a main ingredient (usually vegetable) which is coated/mixed in a spiced gram flour batter and then deep fried.
Try it with: cauliflower, chicken or potato.

1. In a pan heat 500ml of oil until medium-hot (approx. 165°C).
2. Empty the pack into a large mixing bowl and gradually add 150 ml water and a good pinch of salt. Mix until the batter is smooth and thick.
3. Using 350g of ingredients such as chicken or cauliflower, dip small pieces into the batter coating well.
4. Carefully lower the pieces into the oil and fry until golden brown and fully cooked through (around 4-5 mins).
5. Remove from oil and leave to rest on kitchen paper before serving.
