Palak Paneer Spice Mix
Cook Rafi’s version of this popular North Indian side recipe at home in under 30 minutes.
A lightly spiced sauce to complement traditional Indian curd cheese and spinach puree. Either puree or wilt the spinach depending on the final texture you desire.
Try the Palak Paneer as a lighter main recipe option alongside Bombay Potatoes and Cumin Rice.
Palak, meaning spinach is used a lot in Indian cooking and is often pureed in North Indian recipes like this Spice Mix suggests.
Serve it with: Cumin Rice and Bombay Potato.

- Blanch 200g of spinach and immediately soak in iced water.
- Once cool, strain and blend spinach to a puree with a little water, then keep aside.
- Gently fry 200g cubed paneer until golden and keep aside.
- Empty the contents of the pack into a pan with 200ml of water and simmer for 5 minutes.
- Add 2 fresh chopped tomatoes and simmer for a further 2 minutes.
- Add the spinach and paneer then simmer for 10 minutes until the sauce is fairly thick.
- Garnish with double cream (optional).
- Season and serve.
