Cook Rafi’s version of this popular South Indian lentil recipe at home in under 40 minutes.
A satisfying South Indian lentil recipe, with curry leaves and mustard seeds.
Sambhar (also known as Sambar) is often eaten for breakfast with dosa (Indian pancakes) or idlis (rice dumplings).
Rafi’s son, Lee was inspired by one of his trips to India, to add a version of the popular lentil recipe to the Spicebox menu. We make our own Sambhar powder blend in-house which is a crucial ingredient for this recipe as it adds a distinctive flavour.
Serve it with: pilau rice and mixed pickle.

- Empty sachet 1 (lentils) into a pan with 500ml water, 2 fresh tomatoes and 200g mixed vegetables.
- Bring to the boil, cover, and simmer for 10 mins. Adjust water if the mixture is too thick.
- Add sachet 2 (powdered spices) and continue to simmer for a further 2 mins.
- In a frying pan, fry sachet 3 (whole spices) in 2 tbsp of oil until the mustard seeds begin to splutter.
- Pour this mixture over the lentils and vegetables.
- Garnish with lemon juice and serve.
