Spring Onion and Mint Chutney Spice Mix
Make Rafi’s version of this hot, fresh chutney at home in just 10 minutes. Make this chutney and keep it in the fridge for when you want to add some intensity and freshness to your meal.
This refreshing, hot chutney is quick to make and has a super fresh and vibrant flavour!
Fresh chutneys are very important to the South Indian diet as they lift up the flavours of recipes and are another way of adding heat.
This Spice Mix is based on a version of Rafi’s favourite chutney - Kotmir Pudina which uses coriander and mint.
Serve it with: Ma's Paretal or Homestyle Curry.

Cooking Instructions
- Heat 1 tbsp of sunflower oil in a pan.
- Add 1 roughly chopped bunch of spring onions , 5 sliced cloves of garlic and the fresh green chilli.
- Saute for 2 minutes, remove from heat and let cool.
- Add the mixture to a pestle and mortar or spice grinder with a small handful of mint leaves, the juice of half a lemon, 1/4 tsp of salt and 1/2 tsp of sugar.
- Grind together and empty into a bowl.
- Fry the contents of the sachet with 1 tsp of sunflower oil for 2 minutes, pour over the chutney and serve.
