Make Rafi’s version of this cooling, refreshing dip at home in just 10 minutes.
This fresh, tangy accompaniment has tempered spices added which is perfect for serving alongside one of our Curry Packs or Side Dish recipes..
In Rafi’s ‘Great Indian recipe’ cookbook she recommends serving Tarka Yoghurt as an accompaniment to hot curries. This is a great recipe to whip up when making a family meal or hosting a dinner party with guests who have different heat preferences.
Serve it with: Saag Gosht or Vindaloo.

- In a serving bowl, mix 425g of natural yoghurt, adding salt to taste and set aside for later.
- In a small frying pan, heat 4 tbsp of oil and the contents of the spice sachet, frying over a medium heat until the mustard seeds crackle. remove from heat and pour over the yoghurt.
- Cover with a lid and chill in a fridge until you are ready to serve.
- Fold the tarka spices into the yoghurt just before serving.
