Vindaloo Curry Pack
Cook Rafi’s version of the Vindaloo which we’ve taken back to its Goan roots.
This curry has an abundance of bold flavours such as garlic, tamarind, aromatic spices and tangy vinegar.
In the UK, the Vindaloo is known for its intense heat but traditional Goan versions like ours, focus on the flavourings from key ingredients like garlic and vinegar rather than extreme heat.
Try it with: belly pork or mackerel.

- Empty the contents of the pack into a pan with 300ml water, a 400g tin of chopped tomatoes, 2 tbsp tomato puree, 2 tbsp vinegar (any) and 2 tsp sugar. Simmer for 5 minutes.
- Add 1kg of ingredients of your choice. Mix well, cover, and gently cook.
- Gently open simmer for 10 minutes.
- Adjust salt and garnish with coriander leaves.

- Empty the contents of the pack into a pan with175ml water, a 200g of chopped tomatoes (1/2 a tin), 1 tbsp tomato puree, 1 tbsp vinegar (any) and 1 tsp sugar. Simmer for 5 minutes.
- Add 500g of ingredients of your choice. Mix well, cover, and gently cook.
- Remove the lid and simmer for the final 10 minutes of cooking.
- Season with salt, to taste and garnish with coriander leaves.

Very impressed with the curry kits and loved the vindaloo. Very easy to cook and give great results just like having your favourite Indian takeaway but cooking it yourself.if you want to try make it hotter, put a teaspoon of naga pickle in right at the end!
