Cook Rafi’s version of this curry from the sunny shores of Goa in as little as 30 minutes!
Xacutti (sha-koo-ti) is a simple Goan recipe with coconut and warming Garam Masala. This recipe has a rich, thick sauce from the use of tomato puree and creamed coconut. This sweet, richness is counterbalanced by the addition of sharp vinegar.
This recipe is popular in the southwestern coastal state of Goa. Due to the location seafood is a common part of the diet and is often used in this style of recipe. With the larger Christian influence in Goa, the diet will also include pork (not commonly eaten by the Hindus or Muslims).
This recipe comes from a trip which Rafi took with her son, Kevin. Whilst in Calangute they got friendly with their local driver Brij, who shared this recipe with them - and we are so happy that he did!
Try it with: pork belly or white fish.

- Empty the contents of the pack into a pan with 300ml water and add 60g coconut cream. Simmer until coconut dissolves.
- Add 1Kg of ingredients of your choice. Mix well, cover, and gently cook.
- Add 4 tbsp tomato puree, 2 tbsp cider vinegar and 2 tsp sugar.
- Gently open simmer for 10 minutes.
- Adjust salt and serve.

- Simmer until coconut dissolves.
- Add 500g of ingredients of your choice. Mix well, cover, and gently cook.
- Add 2 tbsp tomato puree, 1 tbsp cider vinegar and 1 tsp sugar.
- Gently open simmer for 10 minutes.
- Adjust salt, garnish with toasted coconut and serve.
