Mussels in a Green Thai Broth
Juicy and aromatic, this version of our stunning Thai Green curry is a real winner. The leftover broth also makes a wonderfully warming soup.
Instructions
- Empty the Thai Green Curry Pack into a pan and toast off the spices on a low/medium heat for 5 minutes.
- Add water and coconut milk then simmer for 5 minutes.
- Wash and prepare your mussels then simply steam them in the sauce till they open.
- Add sugar and lime juice. Season with salt, garnish with plenty of fresh coriander. Ready to serve, enjoy!
