Rafi's Cardamom Biscuits

Makes: 20 biscuits |  Suitable for vegetarians

Introduction

Green cardamom is often used in sweets and drinks in India. We made this recipe to serve alongside our Chai Drinking Spices.

Ingredients

 Makes 20 biscuits

125g butter (softened)
90g soft dark brown sugar
2 tbsp golden syrup
200g self-raising flour
1 tsp ground cardamom seeds

Instructions

  1. Preheat the oven to 200C/gas 6.
  2. Cream the butter and sugar, beat in the syrup until fluffy, and then fold in the flour and cardamom.
  3. Knead the dough until smooth, roll into a cylinder, wrap in cling film or parchment paper and place in the fridge for 15 minutes.
  4. Remove from the fridge and cut into 5mm discs and place on a lightly greased baking tray leaving space between each biscuit.
  5. Bake for 12-15 minutes. The biscuits should still be a little soft. Leave to cool and firm up.

The Rafi's Spicebox Cookbook

In 2016, we released the Rafi’s Spicebox Cookbook with recipes all based on Indian flavours and concepts. Some of them have evolved from Rafi’s original recipes and others from our team's travel to India and beyond. This book was written to inspire you to cook the best food that you can. If we can encourage you to enjoy the whole process of cooking these dishes and sharing them with family or friends, our work is done. We’re very proud of these dishes, and hope to hear what you’ve done with them in your own kitchen!
