Chickpea Chaat Recipe

Serves: 4 - 6| Suitable for vegetarians

Introduction

This dish is nice for a summer buffet or as part of a light lunch. It can also be served alongside grilled meat, and can be easily customised by including different veggies.

Ingredients

 Serves 4 - 6

2 x 400g Tinned Chickpeas
1 carrot
1 red onion
Juice of 1 lemon
1 tbsp olive oil
1 tsp Cumin Seeds
1 tsp Onion Seeds
1 tbsp Tamarind Chutney
Fresh coriander
Salt (to taste)
Tikha Sev to garnish (optional)

Instructions

  1. Mix together the chickpeas, carrot, onion and lemon juice.
  2. In a small frying pan, heat the oil and fry the cumin and onion seeds for 1-2 minutes until the cumin seeds start to brown. Pour this over the chickpeas and stir in.
  3. Add the tamarind chutney, coriander and salt and mix well. Give it a taste and add more chutney/coriander/salt to suit your tastes. Sprinkle generously with sev just before serving.

The Rafi's Spicebox Cookbook

In 2016, we released the Rafi’s Spicebox Cookbook with recipes all based on Indian flavours and concepts. Some of them have evolved from Rafi’s original recipes and others from our team's travel to India and beyond. This book was written to inspire you to cook the best food that you can. If we can encourage you to enjoy the whole process of cooking these dishes and sharing them with family or friends, our work is done. We’re very proud of these dishes, and hope to hear what you’ve done with them in your own kitchen!
