Traditional Indian rice pudding

Kheer Rice Pudding Recipe

Serves: 6 | Suitable for vegetarians 

Introduction

This is a very traditional dish in India, often served at mosques and temples. It is very rich and sweet, as are most Indian desserts, so we suggest serving it in small portions along with some fresh or dried fruit to balance the sweetness.

Ingredients

 Serves 6

25g butter
2-inch Cinnamon
175g light brown sugar
115g long grain rice
2 pints whole milk
1 tsp ground cardamom
50g sultanas
25g Flaked Almonds
1/2 tsp freshly grated nutmeg

Instructions

  1. Add the rice, milk, cinnamon, sugar and cardamom to a saucepan and heat gently.
  2. Stir on a low heat for 20 minutes or until the rice is nearly cooked.
  3. Add the sultanas and almonds and keep stirring to prevent the rice from sticking.
  4. When the mixture has thickened, serve either warm or cold with a final dusting of nutmeg and some dried or fresh fruit.
