Introduction

A simple Gujarati pancake which is traditionally served for breakfast, although they also make an ideal brunch or a light lunch. These are best eaten fresh with a simple vegetable dish and dhal.

Ingredients

 Serves 4

225g Gram Flour
1 onion (grated)
1/2 tsp Ajwain Seeds
1/4 tsp Asafoetida
Pinch of salt
375ml water
Oil for frying

Instructions

  1. Add the gram flour to a bowl and whisk to remove any large lumps.
  2. Add the onion, ajwain, asafoetida and salt and mix.
  3. Add the water slowly to prevent lumps and whisk everything together.
  4. When everything is combined you should have quite a thin batter. Cover and leave to rest for 30 minutes.
  5. Heat a small frying pan and when hot, add a little oil. Pour in one ladle of the batter and swirl around the pan (just like pancake day!). Let it cook for 1-2 minutes until the top has just set. The underneath should be golden and should come away from the pan. Flip it over and cook the other side for another 1–2 minutes.
  6. Remove from the pan and wrap in some foil to keep warm.
  7. Repeat the process with the rest of batter, adding a drop of oil between each pancake, to stop them sticking.

The Rafi's Spicebox Cookbook

In 2016, we released the Rafi’s Spicebox Cookbook with recipes all based on Indian flavours and concepts. Some of them have evolved from Rafi’s original recipes and others from our team's travel to India and beyond. This book was written to inspire you to cook the best food that you can. If we can encourage you to enjoy the whole process of cooking these dishes and sharing them with family or friends, our work is done. We’re very proud of these dishes, and hope to hear what you’ve done with them in your own kitchen!
