Spiced Roasted Cauliflower Recipe

Serves: 4 | Suitable for vegetarians

Introduction

Cauliflower has a nice, subtle flavour which acts as a great foil for spices. Roasting it helps bring out the sweetness and when the edges catch it adds a slight bitterness and a different texture.

Ingredients

 Serves 4

1 cauliflower (broken into florets and cut into similar sizes)
3 tbsp oil
2 tsp Ground Cumin
2 tsp Ground Coriander
1/2 tsp Chilli Powder
1 tsp Turmeric
1 tsp Onion Seeds
Salt to taste
Lemon wedges

Instructions

  1. Mix the cauliflower with the oil and all the spices.
  2. Lay out on a baking tray and roast in the oven at gas mark 7/225°C for about 25 minutes, until cooked through and browned.
  3. Season to taste with salt and serve with lemon wedge to squeeze over.
