Tamarind Salmon

A great mid-week meal, ready in less than 20 minutes!

Rafi's Tamarind Salmon

Serves: 4 Ready in: 20 minutes

Introduction

This recipe uses our Tamarind Chutney which is a sour, sweet and fruity chutney that compliments recipes like this salmon dish. 

This recipe adds a delicious sticky marinade to salmon which is perfect for serving as an easy mid-week meal. 

Ingredients

 Serves 4 

4 salmon fillets
4 tbsp Rafi's Tamarind Chutney
2 limes
2 red chillies (finely sliced)
Coriander to garnish 

Instructions

  1. Mix together the chutney, lime juice and chillies.
  2. Cover the salmon fillets in the sticky marinade, and leave to marinade for 20-30 minutes if you have time.
  3. Preheat your oven to 180C/gas 4.
  4. Roast the salmon fillets for 15-20 minutes or cooked to your liking.
  5. Garnish with chopped coriander and lime wedges.
