Spiced tomatoes served on thick slices of toast.

Rafi's Spicebox Tomatoes on Toast Recipe

Serves: 4 | Suitable for vegetarians 

Introduction

It is super quick, tasty and healthy. Using this recipe as a base, you can experiment with a whole host of different spices. The simplicity of the dish really allows you to fully appreciate the flavour of the individual spices – less is more with this one.

Ingredients

 Serves 4

1 tbsp oil
1/2 tsp Panch Pooran 
6 fresh curry leaves
1-2 cloves of garlic (finely sliced)
6 tomatoes (cut into chunks)
Squeeze of lemon
4 thick slices of toast
Coriander (to garnish)
Salt to taste 

Instructions

  1. Heat the oil in a large frying pan, and when hot add the curry  
    leaves and panch pooran and fry for 1 minute.
  2. Add the garlic and continue frying until the garlic just starts 
    to go golden around the edge.
  3. Add the tomatoes (the moisture should stop the garlic going 
    from golden to burnt!) and mix well. Fry for 2-3 minutes.
  4. Squeeze in a little lemon juice and season well with salt.
  5. To serve, squash the tomatoes on top of your toast and 
    garnish with the coriander.
