Tomatoes on toast
Spiced tomatoes served on thick slices of toast.

Introduction
It is super quick, tasty and healthy. Using this recipe as a base, you can experiment with a whole host of different spices. The simplicity of the dish really allows you to fully appreciate the flavour of the individual spices – less is more with this one.
Ingredients
Serves 4 |
1 tbsp oil |
1/2 tsp Panch Pooran |
6 fresh curry leaves |
1-2 cloves of garlic (finely sliced) |
6 tomatoes (cut into chunks) |
Squeeze of lemon |
4 thick slices of toast |
Coriander (to garnish) |
Salt to taste |
Instructions
- Heat the oil in a large frying pan, and when hot add the curry
leaves and panch pooran and fry for 1 minute. - Add the garlic and continue frying until the garlic just starts
to go golden around the edge. - Add the tomatoes (the moisture should stop the garlic going
from golden to burnt!) and mix well. Fry for 2-3 minutes. - Squeeze in a little lemon juice and season well with salt.
- To serve, squash the tomatoes on top of your toast and
garnish with the coriander.
