Vada Pav (Mashed Potato Burger)

Rafi's Vada Pav Recipe

Serves: 6 Ready in: 45 minutes

Introduction

This snack is very famous in Mumbai, and now across the whole of India. There is even a fast food outlet that specialises in just vada pavs.

The vada pav was invented in 1966 by Ashok Vaidy outside Dadar Train Station in Mumbai and is still sold from the same food stall in the same spot by his son, Narendra.

This street food is designed as a treat to be eaten on your commute home from work but we love it for lunch (with ketchup)! 

Ingredients

Serves 6 

Rafi's Bhajia Spice Mix 
750g mashed potato (or use our Bombay Mashed Potato Recipe)
6 white bread rolls
Oil (for deep frying)
 Your favourite Rafi's Chutney

Instructions

Mix the batter ingredients together.

2. Form the cold mashed potato into round golf ball-sized balls (12-15).

3. Coat each mashed potato ball in batter.

4. Deep fry in batches in hot oil for 1-2 minutes, until the potato balls are golden brown all over.

5. To serve, split the bread rolls in half (toast them in you want a crunchier texture) and fill with chutneys and the vada (potato ball). Squish it closed and enjoy!
